This is the mall setup I came up with for the 'Impractical Factorio' series and updated to 0.17 in the 'Back To Basics' series. It's not the best mall, maybe not even a good mall, but it accomplishes the look and feel I was going for, and met all the requirements and restrictions I had set for myself in the series.
The idea was to have a strip mall consisting of different "shops" that are laid out in an orderly fashion.
